I enjoyed a meal at the Oregon Culinary Institute recently and for my main course ordered Pork Squared (Pan Roasted Pork Belly, Creamy Polenta, Frisée, Pickled Onions, Chicharron). It was unctuous and the pickle helped cut through the richness of the pork belly. The polenta was overly rich unbalancing the dish somewhat. Still quite tasty!
Last month was the third annual Barrel Aged Festival at the Civic Taproom and it continued to be a delightful way to while away a chilly afternoon.
